Ingredients: 1 unbaked pie crust 1/2 cup sugar 3 tablespoons cornstarch 1/4 teaspoon salt 3 tablespoons butter or Margarine, melted and cooled 2 eggs, beaten 1 tablespoon vanilla extract Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch pie dish with butter or Margarine.
  2. In a medium bowl, combine 1/2 cup sugar, 3 tablespoons cornstarch, and 1/4 teaspoon salt; set aside. In a large skillet over medium heat, melt the butter or Margarine. Add the eggs and stir until well combined. Stir in the vanilla extract. Pour mixture into the pie dish. Bake for 25 minutes or until golden brown on top and set in the center of the pie crust.
